Rebelle apple pie with brown-butter maple sauce
Vanilla, warm apples and brown-butter maple: a classic apple pie that just leveled up.
How to make it
Warm the pie
Serve the apple pie slightly warm to create a contrast with the ice cream.
Make the brown butter
Melt the butter over medium heat until it turns golden and gives off a lightly nutty aroma.
Make the sauce
Lower the heat, add the maple syrup, cream, cinnamon and a pinch of fleur de sel. Stir gently for 2 to 3 minutes.
Assemble
Place a big scoop of Rebelle Vanilla ice cream on each warm slice of pie.
Pour
Generously pour the still-warm brown-butter maple sauce over the ice cream and pie.
Finish
Add a few toasted pecans and a tiny pinch of fleur de sel.

Make the sauce just before serving. It should be warm but not boiling: hot enough to start melting the vanilla without instantly turning it into soup.
