Funkky XXL Ice Cream Sandwiches
Funkky between two gourmet biscuits, white chocolate and colourful sprinkles. The perfect dessert to share.
How to make it
Prepare cookies
Place cookies on a baking sheet or tray lined with parchment paper.
Add ice cream
Place a generous scoop of Rebelle Funkky ice cream on 6 cookies and gently flatten. Cover with the remaining cookies.
Decorate
Dip the sides of the sandwiches in melted white chocolate, then in sprinkles or mini marshmallows.
Freeze
Place the sandwiches in the freezer for about 30 minutes to firm up.
Serve
Take them out 2 to 3 minutes before serving for a perfect texture.
The Rebelle tip
Let the ice cream soften for 5 minutes before assembling the sandwiches. They'll be easier to put together, and the cookies won't break. For an even more indulgent treat, roll the sides in lightly crushed colorful cereal.
